100% Grass Fed Beef
Grass Fed Beef is lean, but high in health supporting nutrients, and delivers clean Omega 3 to Omega 6 fats in healthy ratio, a unique power for which 100% Grass Fed Beef is well known…Vitamin A, B and E, Folic Acid, the anti-inflammatory omega-3’s and cancer-fighting CLA are all more present than in any other meat commercially grown or otherwise.. These are the nutrients required for life and the reason why certain scientific bodies have deemed Grass Fed Beef the Only Food which will sustain human life without eating anything else. A bit nutty, we say, but the point is well taken. We use protocols which illustrate our believe in science and continue into another year our enduring commitment to Organic Pasture and Livestock Management.
Because Grass Fed Beef is leaner than commercially grown beef, it cooks differently. Dry aging all our 100% Grass Fed local beef is a practice sure to please the most demanding diner. Generally, a Grass Fed Beef Steak is cooked at slightly lower temperatures both on the grill and the stove-top. Just give it a quick searing along with some butter, Ghee and Rosemary and/or garlic, let it cook gently for great results and juiciness. Grass Fed Florida Lamb
Like everything we grow, our Lamb is grown without the use of hormones, antibiotics or confinement of any kind. The Old World Lamb Varieties or Heritage Breeds of Lamb are harvested directly off of the same Organic Local Pastures which sustain our Beef Cattle. The naturally raised, pastured Lambs are never finished in any way, never get any kind of grain EVER, and as always we bring them directly from Our Okeechobee Farms to your Green Market (or home, delivered for FREE!)
Traditional breeds of Lamb are delicious partly because they are bread only for meat, NOT for wool. Rich and sweet in flavor. Unlike modern-day, commercially grown Lamb these animals are 100% Pastured, RAISED OUTDOORS FREE OF ANTIBIOTICS, HORMONES. NO ROUND-UP HERBICIDE RESIDUE S IN THE MEAT, NO PRESERVATIVES OR MSG IN OUR SAUSAGE. This all makes for a far healthier animal AND much Cleaner Meat.
Our Pastured Lamb is Dry Aged for a week, USDA Inspected, Butchered , Cryovac packaged and IMMEDIATELY placed in the Deep Freeze at 10 degrees below zero, and made ready to bring to you at the Green Markets.
Heritage Berkshire Pork
Grown without the use of hormones or antibiotics or crowded on cement floors our Heritage Breeds of Pork include Berkshire, Red Waddle, and Dorac each of which is harvested from the same Organic Pastures which sustain our Lamb and Beef Cattle. The naturally raised pastured Pork we harvest are never penned or caged or finished in any way and as always brought directly from the Farm to your Green Market (or home delivered for FREE!)
Heritage or traditional breeds of Pig are delicious and certainly NOT “The Other White Meat”. It is dark and rich in flavor. Unlike modern-day, commercially grown Pork these animals are Pasture-Raised Outdoors every day, No Antibiotics, No Hormones, No Herbicides, No Toxic Chemical Residues in the meat, No Preservatives or MSG in any of our Sausages. This all makes for a far healthier animal AND much Cleaner Meat.

Wild Harvested Florida Boar
Harvested from the same Organic Pastures that sustain our Lamb and Beef Cattle, the Florida Boar we harvest are never penned, caged or finished in any way. They are truly wild, and harvested straight off the hundreds of acres of pristine pastures in a wild foraging environment. No feed supplements of any kind.
Wild Boar is absolutely delicious, unlike modern-day, commercially grown Pork. It is free of SOY, WHEAT, CORN, GLUTEN, ANTIBIOTICS, HORMONES, PRESERVATIVES, MSG, NO GM GRAIN OR ROUND-UP RESIDUE.
Our boar is Dry Aged for 6 days. It is USDA Inspected, Butchered , Cryovac packaged and IMMEDIATELY placed in the Deep Freeze at 10 degrees below zero and made ready for delivery or pick-up at the Green Markets.
Locally Pastured Chicken
Our beautiful, outdoor birds enjoy all their natural behaviors, as they grow in open cage free spaces. They live a full life and enjoy every day of their lives, poking around the pastures in the grass and other living forage. These birds are never in-doors or caged. You have our word on it, and you’ll recognize the value of this rule, the moment you bite into one!
Modern-day, commercially grown chickens, are raised with 12 birds in a 4 cu ft cage. Our Birds live outdoors, in natural conditions, and are FREE OF ANTIBIOTICS, HORMONES, ROUND-UP HERBICIDE and other RESIDUES, because they are pastured on clean land and because these additives are never introduced.
